Salami
Good article in The New York Times about Salami. Dry-Cured Sausages: Kissed by Air, Never by Fire - New York Times
We are lucky in Seattle to have a world-class Salami place called Salumi. Its a wonderful place. Line for lunch starts at 11am and its packed for hours.
